摘要
机械化是中国白酒产业当前最热门的话题之一,也是中国白酒产业重要的一次转型升级,对于浓香型白酒产业而言也是极具重要影响。从浓香型白酒机械化制曲工艺入手,浅析其研究进展及现状,主要分析了间歇式配料机、液压型制曲机、气动式制曲机、冲压式制曲机和多工位柔性制曲机等历代主流制曲设备的优缺点,并对后续发展方向提出了拙见,以此对浓香型白酒机械化制曲工艺的创新与发展提供一定的参考。
Mechanization is one of the hottest topics in Chinese Baijiu industry at present, and it is also an important transformation and upgrading of Chinese Baijiu industry. It also has a very important impact on the Luzhou-flavor Baijiu industry. This paper starts with the mechanized starter-making process of Luzhou-flavor Baijiu, and briefly analyzes its research progress and status. The advantages and disadvantages of the mainstream starter-making equipment in the past dynasties, such as batch batching machine, hydraulic starter-making machine, pneumatic starter-making machine, stamping starter-making machine and multi-station flexible starter-making machine, were mainly analyzed. It also puts forward my humble opinion on the follow-up development direction, in order to provide a certain reference for the innovation and development of the mechanized starter-making process of Luzhou-flavor Baijiu.
