五种常见的食菌类黄酮提取液的活性比较研究

摘要 研究5种食用菌黄酮提取液的活性,用正交试验确定最佳提取条件,并在此条件下提取食用菌黄酮,用水杨酸法测定食用菌黄酮提取液对亚硝酸根的消除作用、甲基紫法测定食用菌黄酮提取液对羟基自由基的消除作用、DPPH法测定食用菌黄酮提取液对DPPH的消除作用、DNS法测定食用菌黄酮提取液对α-淀粉酶的抑制作用及用测定抑菌圈直径法测定其抑菌作用。结果表明:五种菌类黄酮提取液对亚硝酸根消除能力大小顺序为:茶树菇>口蘑>秀珍菇>杏鲍菇>香菇。对羟基自由基消除能力大小顺序为:口蘑>秀珍菇>杏鲍菇>香菇>茶树菇。对DPPH的消除能力大小顺序为:杏鲍菇>口蘑>秀珍菇>香菇>茶树菇。对α-淀粉酶的抑制能力大小顺序为:秀珍菇>口蘑>茶树菇>杏鲍菇>香菇。五种食用菌黄酮提取液对金黄色葡萄球菌、大肠杆菌、枯草芽孢杆菌均有抑菌效果,对番茄藻疫菌抑制效果不明显,5种食用菌中秀珍菇和杏鲍菇品质更佳。 The activities of flavonoids extraction from five kinds of edible mushroom were studied.These flavonoids extraction on the nitrite eliminating effect with salicylic acid method,the hydroxyl free radical elimination effect with methyl violet method,the DPPH elimination effect with DPPH method,theα-amylase inhibition with DNS method and the antimicrobial effect with the inhibition zone method were determined after confirming the optimum extracted condition with orthogonal experiment.The results showed that the ability on eliminating nitrite of flavonoids extraction was Agrocybe chaxingu>Calocybe gambosa>Pleurotus geesteranus>Pleurotus eryngii>Lentinus edodes,on eliminating hydroxyl free radical of flavonoids extraction was Calocybe gambosa>Pleurotus geesteranus>Pleurotus eryngii>Lentinus edodes>Agrocybe chaxingu,on eliminating the DPPH was Pleurotus eryngii>Calocybe gambosa>Pleurotus geesteranus>Lentinus edodes>Agrocybe chaxingu,and on inhibitingα-amylase was Pleurotus geesteranus>Calocybe gambosa>Agrocybe chaxingu>Pleurotus eryngii>Lentinus edodes.The flavonoids extraction from five kinds of edible mushroom(especially the Pleurotus geesteranus and Pleurotus eryngii)could inhibit the growth of Staphylococcus aureus,Escherichia coli and Bacillus subtilis.And the inhibition on pathogen of tomato early blight was not good.
