壳聚糖对荆芥保鲜效果的研究

摘要 为了延长荆芥(Nepeta cataria L)的货架期,筛选出适合荆芥保存的壳聚糖浓度。以荆芥为研究材料,在低温(0±0.2)℃条件下,分别采用0、1%、1.5%、2%、4%的壳聚糖浓度处理荆芥进行保鲜实验,每隔24小时进行感官评价,测量失重率、总黄酮含量、Vc含量、亚硝酸盐含量。结果表明,壳聚糖处理能有效降低荆芥贮藏过程中亚硝酸盐的增长速度,降低褐变程度,减少抗坏血酸的损失,延缓总黄酮等指标的变化幅度,且当壳聚糖浓度为1%时总体效果最好。 In order to prolong the shelf life of Schizonepeta and to screen out the suitable concentration of chitosan for its preservation.Schizonepeta was taken as the study material,and treated with 0,1%,1.5%,2% and 4% chitosan concentration respectively under the condition of(0±0.2)℃.The sensory evaluation and the weight loss rate,total flavonoids content,VC content and nitrite content were measured every 24 hours.The results showed that chitosan treatment could effectively reduce the growth rate of nitrite,the degree of browning and the loss of ascorbic acid,and delay the change range of total flavonoids.When the concentration of chitosan is 1%,the effect is the best.
