摘要
本文主要介绍了无机抗菌材料、有机抗菌材料和天然抗菌材料的分类,并分析了加填抗菌型、涂敷抗菌型和覆膜抗菌型三种抗菌纸的研究进展,从而为食品用抗菌纸包装材料的研究奠定基础。在总结国内外研究成果的基础上,介绍了加填型抗菌纸、涂敷型抗菌纸和覆膜型抗菌纸在食品用纸包装中的应用。其中,使用覆膜型抗菌纸能够有效避免加填型抗菌纸工艺复杂和涂敷型抗菌纸表面涂覆厚度不均匀的问题。生物基覆膜型抗菌纸有良好的降解能力,不会造成环境污染,而且还可以改善目前防腐剂影响食品口感、细菌耐受性增加以及物理隔离失效等问题。因此,生物基覆膜型抗菌纸在未来发展潜力巨大。
In this paper, the classification of inorganic antibacterial materials, organic antibacterial materials and natural antibacterial materials are introduced, and the research progress of filling antibacterial paper, coated antibacterial paper and tectorial antibacterial paper are analyzed, so as to lay a foundation for the future research of antibacterial paper packaging materials for food. Based on the summary of the research results at home and abroad, the application of filling type antibacterial paper, coated type antibacterial paper and tectorial type antibacterial paper in food paper packaging was introduced. Among them, the use of tectorial antibacterial paper can effectively avoid the complex process of the filling antibacterial paper and the uneven surface coating thickness caused by the coated antibacterial paper. Bio-based tectorial antibacterial paper has good degradation ability and will not cause environmental pollution. It can also improve the current problems such as the impact of preservatives on food taste, the increase of bacterial tolerance and the failure of physical isolation. Therefore, biobased tectorial antibacterial paper has great development potential in the future.
