摘要
功能性油脂易被氧化变质,限制了其应用范围。采用微胶囊化技术包埋功能性油脂,将其与空气隔离,解决功能性油脂应用受限制的问题。围绕喷雾干燥微胶囊技术、微胶囊喷雾干燥法中不同条件及其在功能性油脂应用研究进展进行综述,为功能性油脂研究提供一些理论依据,为进一步的使用和开发提供参考价值。
Functional oils are easy to be oxidized and deteriorated,which limits their application.Microencapsulation technology was used to encapsulate functional oils and isolate them from air to solve the problem of limited application of functional oils.This paper reviewed the research progress of spray drying microcapsule technology,different conditions in microcapsule spray drying method and its application in functional oils,providing some theoretical basis for functional oils research and reference value for further use and development.
