摘要
香蕉营养丰富,所含的多酚、多糖、类胡萝卜素等成分具有抗菌、抗氧化、抗癌、降血糖等功效。通过综述香蕉色素的种类、提取方法、稳定性研究及影响色素含量的因素,以期为香蕉色素的研究与开发利用提供参考。
Bananas are rich in nutrients.The polyphenols,polysaccharides,carotenoids and other ingredients contained in bananas have antibacterial,antionxidant,anti-cancer,hypoglyeemic and other effects.The types,extraction methods,stability and factors affecting the content of banana pigment were summarized,in order to provide a reference for the research and development of banana pigment.
