摘要
我国是世界鸡蛋生产和消费大国,并且以壳蛋消费为主。由于蛋壳力学特性下降导致的破损问题给禽蛋产业带来巨大的经济损失,改善蛋壳品质对促进产业发展和提高蛋鸡养殖效益具有重要意义。鸡蛋蛋壳是以碳酸钙为矿化材料形成的生物矿化物,其力学特性取决于材料组成、结构特征等因素。蛋壳分级结构及其生物矿化形成机制的研究为解析力学特性下降和研发调控措施打开了新的视角。本文综述了蛋壳的分级结构与生物矿化形成、力学特性下降以及调控方面的最新研究进展,旨在为通过营养干预措施改善产蛋后期蛋壳品质提供参考。
China is the one of the world’s largest egg-producing and consuming country,and most of eggs are consumed as fresh table eggs. Huge economic loss due to egg breakage caused by decreased mechanical properties is a major concern for poultry egg industry. The strategies of eggshell quality improvement could be of considerable value to egg producers and poultry industry. Eggshell is a calcium carbonate biomineral with excellent mechanical properties determined by material composition,structure and other factors. Further understanding of eggshell biomineralization provide insights into the deterioration of eggshell quality with the hen’s age and development of nutritional interventions. This paper reviewed the research progress in eggshell hierarchical structures and biomineralization,mechanical properties and its nutrition modulation,which could provide theoretical basis for relieving eggshell damage and improving eggshell mechanical properties through nutritional interventions.[Chinese Journal of Animal Nutrition,2023,35(1):1-12]
