肉制品中食源性致病菌检测技术的研究综述 被引量:1

摘要 肉类制品极易受到食源性致病菌的污染,近年来,随着新冠肺炎疫情在全球的蔓延,消费者对所摄入食品中所含有的致病菌及其食源性疾病的关注度越来越高,我国肉类食品市场需求大,肉制品的卫生安全问题始终是重中之重,对食源性致病菌的检测技术也一直成为研究热点,本文在总结肉制品的食源性致病菌污染状况的基础上,主要从现代检测技术入手,重点综述了基于PCR的检测技术、免疫分析技术、光谱分析法等食源性致病菌的检测技术,并在分析现代检测技术的特点和问题的基础上,对肉制品今后的发展以及食源性致病菌检测技术的发展方向提出了展望,希望未来肉制品中食源性致病菌的检测技术进一步提升和完善。 Meat products are extremely susceptible to contamination by foodborne pathogens. In recent years,with the spread of COVID-19 worldwide,consumers are increasingly concerning about the pathogens and foodborne diseases in the food. The demand for meat products in China is huge,and the safety of meat products has always been the first priority. The detection technology of food borne pathogens has always been a research hotspot. this paper reviewed the contamination status of foodborne pathogens in meat products,focused on the detection technology of foodborne pathogens,such as PCR based detection technology and immunoassay technology,The future development of meat products and the development direction of detection technology of foodborne pathogens were prospected. It was expected that the detection technology of foodborne pathogens in meat products would be further improved in the future.
