摘要 粮食安全是储粮的重中之重,在储藏过程中,粮食会受到储粮环境中物理场和生物场的影响,在这些场综合作用下,粮堆的结露和发热霉变、以及储粮害虫和储粮微生物的滋生严重危害粮食品质。多场耦合效应是近年来国内外对储粮生态系统研究的一个新理念,研究粮食储藏环境中的多场耦合效应可以解决目前粮食储藏过程中的智能化程度低、监测手段落后等问题。本文围绕温度场、湿度场和压力场单独作用对粮食品质的影响,储粮昆虫和储粮微生物的取食与繁殖对粮食品质的影响,以及物理场之间的耦合作用、生物场之间的耦合作用、物理场与生物场的耦合作用对粮食品质的影响展开综述,为开发优质粮食工程保质减损储粮技术的智能化监测和预警系统提供参考。 Food security is the top priority of grain storage. During the storage process, the quality of grain will be affected by the physical and biological fields in the grain storage environment. Under the combined effect of these fields, the quality of grain is seriously jeopardized by dew, heat and mildew in the grain pile, as well as by the growth of grain storage pests and microorganisms. The multi-field coupling effect is a new concept in the research of grain storage ecosystems in recent years. The study of the effect of multi-field coupling on the grain storage environment can solve the problems of low intelligence and backward monitoring methods in the current grain storage process. In the present paper, the effects of temperature, moisture and pressure fields acting alone on grain quality, and the effects of insect and microbial feeding and reproduction on grain quality, and the effects of coupling between physical fields, coupling between biological fields, and coupling between physical and biological fields on grain quality were reviewed, so as to provide guidance for the development of intelligent monitoring and early warning systems for high-quality grain engineering to ensure quality and reduce grain storage technology.
