低温等离子体改性粮油植物蛋白结构的研究进展

摘要 粮油植物蛋白具有可持续来源、经济成本低和健康益处等优势,但低功能性限制了其在食品、包装和药品等工业领域的应用,需要科学有效的方法对植物蛋白改性,以拓宽其应用领域。低温等离子体作为一种新兴的无毒、非热物理改性技术,在粮油植物蛋白改性中具有良好的发展前景。本文综述了低温等离子体改性蛋白质的机理,并对低温等离子体技术对蛋白质结构特征的影响进行了系统总结,展望了低温等离子体技术在植物蛋白改性方面的应用前景。 Grain and oil plant protein has the advantages of sustainable source,low economic cost and health benefits,however,its low functionality limits its application in food,packaging and pharmaceutical industries.Scientific and effective methods are needed to modify plant protein in order to broaden its application fields.As a new non-toxic and non-thermal physical modification technology,cold plasma has a good development prospect in the modification of plant protein.In this paper,the mechanism of protein modified by cold plasma,and the influence of cold plasma technology on the structural characteristics of protein were systematically summarized.The application prospect of cold plasma technology in plant protein modification was also prospected.
