不同市售品牌咖啡渣中抗氧化成分的提取及活性分析

Extraction and Activity Analysis of Antioxidant Compounds from Spent Coffee Grounds of Different Commercially Available Brands

摘要 为了比较不同市售品牌咖啡渣(spent coffee grounds,SCG)抗氧化活性的大小,以5种常见市售品牌的SCG为原料,采用超分子溶剂(supramolecular solvents,SUPRAS)萃取法提取其活性成分.对SCG提取液中总酚含量、绿原酸和原儿茶酸含量进行测定,并通过DPPH法、TEAC法、FRAP法3种方法分析SCG提取液的抗氧化能力.结果表明,不同市售品牌SCG的抗氧化活性存在差异,其中T品牌、S品牌及L品牌的SCG提取液抗氧化能力优于M品牌和K品牌.同时,研究发现SCG提取液抗氧化能力与总酚含量具有一定的相关性.研究结果可为咖啡渣的综合利用提供一定的理论依据. In order to compare the antioxidant capacity from spent coffee grounds(SCG) of different commercially available brands,five brands of SCG were selected as raw material and their bioactive compounds were extracted by the supramolecular solvent(SUPRAS).The total phenols content(TPC),the content of chlorogenic acid(3-CQA) and protocatechuic acid(PCA) in the produced extracts were determined,and the antioxidant capacity of SCG extracts was evaluated by three radical scavenging assays(DPPH,TEAC,and FRAP).According to statistical analysis,the antioxidant capacities of SCG extracts from different brands were varied.The antioxidant activity of SCG extracts from Tmall,Starbucks and Luckin coffee were better than those from McDonald’s and KFC.At the same time,it was found that the antioxidant capacity of SCG extracts had significant correlation with the content of total phenolics.The results of this study could provide a theoretical basis for the comprehensive utilization of SCG.
