自制杂交构树发酵饲料对育肥猪生长性能、屠宰性能、肉品品质和血清生化指标的影响 被引量:3

摘要 试验旨在研究杂交构树发酵料对育肥猪生长性能、屠宰性能、肉品品质和血清生化指标的影响。选用96头体重相近的健康三元杂交育肥猪,随机分成4个组别(每组4头试验生猪,每组6个重复,总计24个试验组):空白对照组、15%杂交构树饲料添加组、20%杂交构树饲料添加组及25%杂交构树饲料添加组。试验饲喂70 d(预试期7 d,正试期63 d)。结果表明:日增重可略微提高,20%发酵料添加组可提高9.1%;料肉比以15%发酵料添加最低,20%发酵料添加最高;屠宰率、皮厚、眼肌面积无显著差异(P>0.05);25%发酵料添加组的背膘厚显著高于其余各组(P<0.05);25%发酵料添加组的剪切力显著低于对照组(P<0.05);20%发酵料添加组和25%发酵料添加组的肌间脂肪含量显著高于对照组(P<0.05);25%发酵料添加组血清IgA、血清白蛋白、总蛋白含量显著高于其他各组(P<0.05)。研究表明,添加杂交构树发酵料后,试验组在生长性能、屠宰性能及肉品品质方面,无显著影响,但可显著提升机体血清总蛋白、血清白蛋白含量,以增强生猪免疫能力,同时正向影响猪肉肌间脂肪、剪切力等指标,提高猪肉口感。 The purpose of the experiment was to study the effects of hybrid broussonetia papyrifera fermentation material on growth performance,slaughter performance,meat quality and serum biochemical indexes of finishing pigs.96 healthy threeway cross fattening pigs with similar body weight were randomly divided into 4 groups(4 test pigs in each group,6 replicates in each group,24 test groups in total):blank control group,15%cross broussonetia papyrifera feed addition group,20%cross broussonetia papyrifera feed addition group and 25%cross broussonetia papyrifera feed addition group.The trial was fed for 70 days(pre trial period 7 days,trial period 63 days).The results showed that the daily weight gain could be slightly increased,and the 20%fermentation material could increase 9.1%;The feed to meat ratio was the lowest when 15%starter was added,and the highest when 20%starter was added;There was no significant difference in slaughter rate,skin thickness and eye muscle area(P>0.05);The backfat thickness of 25%fermented material group was significantly higher than that of other groups(P<0.05);The shearing force of the 25%fermented material group was significantly lower than that of the control group(P<0.05);The content of intramuscular fat in the 20%and 25%fermented material groups was significantly higher than that in the control group(P<0.05);The content of serum IgA,serum albumin and total protein in 25%fermented material group was significantly higher than that in other groups(P<0.05).The research shows that after adding the hybrid broussonetia papyrifera fermentation material,the test group has no significant effect on growth performance,slaughter performance and meat quality,but it can significantly increase the content of total serum protein and serum albumin,so as to enhance the immunity of pigs.At the same time,it can positively affect the indexes of pork muscle fat,shearing force and improve the taste of pork.
