摘要
【目的】明确雪茄烟叶调制过程中颜色变化情况及其与质体色素、多酚类物质含量变化的相互关系。【方法】以“哈伯纳斯”品种为试验材料,通过色差仪将调制过程中烟叶的颜色变化进行量化,并结合其内在化学成分变化进行相关性分析。【结果】随着调制过程的推进,不同部位雪茄烟叶调制过程中颜色参数值变化趋势基本一致,烟叶中总糖、烟碱、还原糖、绿原酸、芸香苷含量呈单峰变化趋势;叶绿素a、叶绿素b、类胡萝卜素、莨菪亭含量随调制进行逐渐降低。在一定范围内随着叶绿素b、类胡萝卜素、绿原酸含量的降低,H°、H值呈升高趋势;随着还原糖含量的升高,引起L^(*)值和b^(*)值的升高。【结论】调制过程中外观颜色主要受叶绿素b、类胡萝卜素、绿原酸和还原糖含量的影响较大。
【Objective】 To clarify the relationship between color change and the content change of plastid pigment and polyphenols in cigar leaves during the modulation process. 【Methods】 Habanos variety was used as experimental material, the color change of tobacco leaves during modulation was quantified by colorimeter, and the correlation analysis was carried out combined with the internal chemical composition change. 【Results】 With the advancement of the modulation process, the change trend of color parameter value in the modulation process of cigar leaves in different parts was basically the same, and the content changes of total sugar, nicotine, reducing sugar, chlorogenic acid and rubin in the tobacco leaves showed a unimodal trend, while chlorophyll a, chlorophyll b, carotenoid and pavilion content gradually decreases with the modulation. In a certain range, H°and H values increased with the decreasing of chlorophyll b, carotenoid and green raw acid content;with the increase of reducing sugar content, L^(*)value and b^(*)value increased accordingly. 【Conclusion】 In the process of modulation, the color of cigar leaves first changed from green to yellow, and gradually became brown in the middle and late stages of modulation. In this process, the color parameters of tobacco leaves were greatly affected by the content of chlorophyll b, carotenoid, chlorogenic acid and reducing sugar.
