摘要
以新鲜大姜为试验材料,研究新型生物细胞营养素在大姜防腐保鲜上的应用。根据试验管理标准,配置3种浓度梯度的活化液分别为新型生物细胞营养素:葡萄糖:水=1∶2∶20、1∶10∶100、1∶10∶200,并设置清水组和空白对照组,分析新型生物细胞营养素对大姜失重率、粗纤维含量、生姜黄酮含量和感官评分的影响。结果表明:3种浓度的新型生物细胞营养素都可降低大姜的失重率,以1∶2∶20的效果最为显著,比空白对照组低13.15%;降低粗纤维的含量,最高可达1.486 2%,保持大姜鲜嫩无明显纤维素状态;维持生姜黄酮的含量,高浓度的新型生物细胞营养素活化液可将降低量控制在3.466 1 mg,低浓度的也能保持3.746 2 mg的折损;抑制感官评分的降低,保持大姜的新鲜度。综上,新型生物细胞营养素可以保持大姜的新鲜度,维持各项营养指标,其中新型生物细胞营养素:葡萄糖:水=1∶2∶20的激活素对大姜的防腐保鲜效果最好。
Fresh ginger is used as experimental material to study the application of edible life cell activin in the Anti-corrosion preservation of ginger. According to the test management standard, 3 kinds of activation solution with concentration gradient are tested as following, edible life cell activin: glucose: water=1:2:20,1:10:100, 1:10:200. The clear water group and blank control group are set up to analyze the effects of edible life cell activin on the weight loss rate, crude fiber content, ginger flavanol content and sensory score of ginger. The results show that three concentrations of edible vital cell activin could reduce the weight loss rate of ginger, and the effect of 1:2:20 is most significant, which is 13.15% lower than that of the blank control group. Reduce the content of crude fiber, the highest up to 1.486 2%, and keep the freshness of ginger without obvious cellulose. Maintain the content of flavonoids in ginger, which high concentration of edible life cell activin activation solution can reduce the amount of control in 3.466 1 mg, and low concentration can also maintain the reduction of 3.746 2 mg. Inhibit the decrease of sensory score and maintain the freshness of ginger. To sum up, edible life cell activin could maintain the freshness of ginger and maintain various nutritional indexes. Among them, edible vital cell activin: glucose: water = 1: 2: 20 has the best anti-corrosion preservation effect for ginger.
