摘要 本文通过分析现阶段中国预制菜发展取得的成绩及存在的问题,提出中国预制菜发展需要关注中西饮食文化差异,创造自身的特色。文章从5个方面提出构筑具有中国饮食文化特色的预制菜发展路径,即重构预制菜品类体系、注重感性需求、与传统文化深度结合、保持科技创新以及丰富文化植入。 By analyzing the achievements and existing problems in the development of Chinese prepared food at the present stage,this paper proposes that the development of Chinese prepared food needs to pay attention to the differences between Chinese and Western food culture and create its own characteristics.This paper proposes to construct the development path of prepared food with Chinese food culture characteristics from five aspects:reconstructing the category system of prepared food,paying attention to perceptual needs,deeply combining with traditional culture,maintaining scientific and technological innovation,and enriching cultural implantation.
