《齐民要术》中神曲工艺及其催生因素的研析

摘要 《齐民要术》是我国首部详细记载制曲工艺的综合性农学著作,其中的神曲工艺以神曲独特的发酵和糖化能力被视为中国古代制曲技术的代表。神曲工艺流程涉及择时、选料、培育等方面的内容不但与现代制曲工艺的科学性相耦合,且其自身也是中国传统文化的一种体现。神曲工艺是中国古代制曲工艺与传统文化的综合体,深入分析其催生因素时,可以发现神曲工艺与其所处的社会的环境、技术和社会文化等密切相关。神曲工艺及其催生因素的综合分析揭示了传统技术与社会文化互动关系的新图式,促进了传统技术研究视角的演进。 The Qi Min Yao Shu is the first comprehensive agronomy work in traditional China to record the koji-making process in detail. The Shen Qu process is regarded as the representative of ancient Chinese koji-making technology due to its unique fermentation and saccharification capabilities. The technological process involves aspects such as timing, material selection, cultivation, etc., which reflects the scientific nature of modern koji-making technology as well as the traditional Chinese culture. It is a combination of ancient Chinese koji-making craftsmanship and traditional culture. In-depth analysis of its production factors shows that its craftsmanship is closely related to the social environment, technology and social culture in which it is located. The comprehensive analysis of the craftsmanship and its production factors reveals a new schema of the interaction between traditional technology and social culture, and promotes the evolution of the perspective of traditional technology research.
