摘要 植物源活性肽是以大豆、花生、玉米、小麦等植物为原料制备得到的具有生物活性的小分子肽,因其生理活性高、安全性高、成本低廉,已成为现代食品和药品行业研究和关注的热点。相比于蛋白质,较低分子质量的活性肽更易被人体消化吸收,且具有特殊的生理功能,如免疫调节、抗疲劳、抗氧化、降血压等。活性肽种类繁多,对人体健康的影响也不尽相同,研究它们的作用机制和功能特性,对相关活性肽产品的开发和应用具有指导意义。近年来,国内外越来越重视植物蛋白的潜在价值,已有大量关于植物源活性肽的生理功能和制备、提纯方法的研究报道。文章从分类、制备、分离纯化、功能特性的研究进展等方面对植物源活性肽进行综述,以期为植物源活性肽的进一步研究与开发利用提供参考。 Plant-derived active peptides are biologically active small molecule peptides prepared from soybean,peanut,corn,wheat and other plants,which have become a hot spot for research and attention in modern food and pharmaceutical industries because of their high physiological activity,high safety and low cost.Compared with protein,the lower molecular weight active peptide is easier to be digested and absorbed by human body,and has special physiological functions,such as immunomodulation,antifatigue,anti-oxidation,hypotension.There are many kinds of active peptides and their effects on human health are different,so the study of their mechanism of action and functional properties is of guiding significance to the development and application of related active peptide products.In recent years,the potential value of plant proteins has been paid more attention at home and abroad,and there have been a lot of research reports on the physiological functions and preparation and purification methods of plantderived active peptides.In this paper,we review the active peptides of plant origin in terms of classification,preparation,isolation and purification,and progress of functional properties,in order to provide reference for further research and development and utilization of active peptides of plant origin.
