摘要
随着食品过敏性疾病发生率呈上升趋势,食品过敏已经成为备受关注的食品安全问题。适当的检测技术可以评估食物过敏的潜在风险,同时验证过敏原标签的准确性。环介导等温扩增(Loop-mediated isothermal amplification,LAMP)技术作为一种检测手段,因灵敏度高、特异性强、无需高昂仪器等优势已经在食品安全检测中发挥了重要的作用。文章概述了LAMP技术的原理,总结了LAMP技术的改进和发展,重点阐述了LAMP技术在食品过敏原检测中的应用和标准化进程,以期为食品过敏原检测、过敏原标识制度的执行和监管提供技术参考。
With the rising trend of food allergy disease,food allergy has become a food safety issue that has attracted much attention.Appropriate testing techniques can assess the potential risk of food allergy while validating the accuracy of allergen labels.As a detection method,Loop-mediated isothermal amplification(LAMP)technology has played an important role in food safety detection due to its advantages of high sensitivity,strong specificity and does not need costly instruments.This present paper summarized and analyzed the research progress and detection standards of LAMP detection for food allergens in recent years,analyzed the advantages and improvements of LAMP technology,and prospected the development of LAMP technology.In order to provide technical reference for food allergen detection,implementation,and supervision of allergen labeling system.
