摘要
果渣类膳食纤维在预防肥胖、改善肠道功能、消除外来有害物质、减少心血管疾病和防止便秘等方面具有重要的生理功能。其中油橄榄果渣富含多种膳食纤维,具备较好的利用价值。综述了膳食纤维的功能特性,旨在为油橄榄果渣膳食纤维的利用和开发提供参考。
Pomace dietary fiber has important physiological functions in preventing obesity, improving intestinal function, eliminating foreign harmful substances, reducing cardiovascular diseases and preventing constipation.Olive pomace is rich in dietary fiber and has good utilization value. The functional characteristics of dietary fiber were reviewed in order to provide reference for the utilization and development of dietary fiber from olive pomace.
