氯霉素在褐篮子鱼流通环节中非法使用情况研究

摘要 本次研究旨在为监管部门在对海水鱼水产品中氯霉素非法添加的监督管理和风险监测工作环节提供判断依据,为经营户和消费者的食用安全提供有效建议。以海水鱼水产品褐篮子鱼为对象,通过外源性添加氯霉素的方式模拟流通环节中氯霉素被非法添加的情形,制备含氯霉素的褐篮子鱼样本,分别对褐篮子鱼样本进行不同给药浓度(不换水)、同一浓度下换水与不换水的处理,且对鱼体及水体中氯霉素残留的情况进行分析。结果显示,氯霉素给药浓度越高,褐篮子鱼组织内氯霉素含量越高;停药持续养殖(不换水),样品中的氯霉素含量随时间延长而降低,不同给药浓度的样品停药持续养殖24 h后,消除率均达90%以上;停药之后的养殖水中氯霉素含量在48 h后有所下降,消除率在32.46%,而换水实验中养殖水中氯霉素含量下降明显,在48 h后,消除率达100%。实验说明,停药处理有利于褐篮子鱼体内氯霉素的消除,氯霉素含量能明显下降;换水处理也有利于褐篮子鱼中氯霉素的消除。 The purpose of this study is to provide judgment basis for the regulatory authorities in the supervision and management and risk monitoring of the illegal addition of chloramphenicol in marine fish and aquatic products,and to provide effective suggestions for the food safety of operators and consumers.Taking Brown basket fish,a marine fish and aquatic product,as the object,the illegal addition of chloramphenicol in the circulation link was simulated by exogenous addition of chloramphenicol,and the samples of brown basket fish containing chloramphenicol were prepared.The samples of brown basket fish were treated with different dosing concentrations(without water change),with and without water change at the same concentration,and the residue of chloramphenicol in fish and water was analyzed.The results showed that the higher the concentration of chloramphenicol,the higher the content of chloramphenicol in tissues of brown basket fish.The content of chloramphenicol in the samples decreased with time.The elimination rate of the samples with different concentrations of chloramphenicol was more than 90%after 24 h of continuous culture.After drug withdrawal,the chloramphenicol content in cultured water decreased after 48 hours,and the elimination rate was 32.46%.However,in the water exchange experiment,the chloramphenicol content in cultured water decreased significantly,and the elimination rate reached 100%after 48 hours.The experiment showed that the drug withdrawal treatment was conducive to the elimination of chloramphenicol in brown basket fish,and the content of chloramphenicol could be significantly reduced;Changing water treatment is also conducive to the elimination of chloramphenicol in brown basket fish.
