基于HS-SPME-GC-MS鉴定不同树龄柚子花关键呈香物质

Identification of Key Aromatic Substances in Pomelo Flowers of Different Tree Ages Based on HS-SPME-GC-MS

摘要 [目的]通过分析鉴定上海青浦4月2种不同树龄的柚子花得出其关键的呈香物质以指导相关副产品的开发。[方法]采用顶空固相微萃取结合气质联用的方法对上海青浦4月的大树(10年)和小树(5年)柚子花的风味进行富集分析,通过双柱定性以及香气活力值OAV的计算鉴定其关键呈香物质。[结果]共鉴定出44种风味物质,其中大树37种、小树29种,大树和小树共同鉴定出的风味物质22种,香气贡献值较大的风味物质10种,分别为芳樟醇、月桂烯、右旋萜二烯、蒎烯、β-罗勒烯、香叶醇、石竹烯、己醛、β-蒎烯、正己醇。不同树龄柚子花的香气特征总体差异不大,但大树柚子花的花香和果香较重,且香气特征更为多元丰富,小树柚子花的香气特征总体比大树柚子花的甜香多一些。[结论]该研究为柚子花风味的开发提供一定的理论指导。 [Objective]To identify two kinds of pomelo flowers of different ages in April in Qingpu,Shanghai and find out their key aroma substances to guide the development of related by-products.[Method]HS-SPME-GC-MS method was used to analyze the flavor of pomelo flowers of large trees(ten years)and small trees(five years)in April in Qingpu,Shanghai.The key aroma compounds were identified by double-column and OAV values were calculated.[Result]44 kinds of flavor substances were identified,and 22 were common to both species.There were 37 and 29 compounds in large trees and small trees respectively.There were ten substances with OAV values greater than one:linalool,myrcene,D-Limonene,pinene,β-ocimene,geraniol,caryophyllene,hexanal,β-pinene,hexyl alcohol.The aroma characteristics of pomelo flowers of different ages were not very different in general.The flowers of large trees had more floral and fruity notes,and the aroma characteristics were more diversity and rich.The aroma characteristics of small trees had sweeter note.[Conclusion]This study provides some theoretical guidance for the development of pomelo flower flavor.
