摘要
食品艺术雕刻是饮食界一门重要的技术,它能全面提高菜肴的品质,赋予菜肴丰富的文化内涵,起到画龙点睛的效果。高档的菜品离不开精美的点缀,而食品艺术雕刻是其中最有技术含量的方式,同时难度系数也最高。随着人们对餐饮文化要求的不断提高,雅致而脱俗的食品艺术雕刻备受欢迎。在食品烹饪中应用雕刻工艺意义重大,本文对食品雕刻分类进行分析,提出了有效使用雕刻工艺的策略,以期切实强化食品烹饪品质。
Food art carving is an important technology in the catering industry. It can comprehensively improve the quality of dishes, endow dishes with rich cultural connotation, and make the finishing point. High grade dishes can not be separated from exquisite embellishment, and food art carving is the most technical way, and the difficulty coefficient is also the highest. With the continuous improvement of people’s requirements for catering culture,elegant and refined food art sculpture is popular. The application of carving technology in food cooking is of great significance. This paper analyzes the classification of food carving and puts forward strategies for effective use of carving technology in order to effectively strengthen the cooking quality of food.
