摘要
目的:比较市售80种奶茶、奶盖茶及谷物饮品的主要营养成分差异,为完善国家食物成分数据库提供基础参考数据。方法:采用国标检测方法对奶茶中的脂肪、糖、咖啡因、茶多酚等营养成分进行测定,采用统计学方法比较各种奶茶的主要营养成分差异。结果:不同种类奶茶的脂肪、灰分、纤维、总糖、还原糖含量差异较大。结论:不同品种奶茶的营养成分指标差异明显,需根据健康状况选择饮用。
Objective: To compare the differences in nutritional components of 80 varieties of milk tea,cheese milk tea and cereal drinks. Method: The fat content, sugar, caffeine, tea polyphenols and other nutrients of milk tea were determined by physical and chemical analysis methods, and nutritional differences between varieties were compared and analyzed by statistical methods. Result: The contents of fat, ash, fiber, total sugar and reducing sugar in different kinds of milk tea were different. Conclusion: Different varieties of milk tea have obvious nutritional differences.The drink should be selected according to the health situation.
