摘要 清香型白酒入口绵,落口甜,以其特有的芳香与清爽闻名中外,深受消费者欢迎。近年来,在国家发改委将产业目录“限制类”产业中白酒产业去掉后,白酒行业势必将迎来重大发展机遇。清香型白酒清香纯正、醇甜柔和的特点与其独特的酿造工艺息息相关,本文对清香型白酒的生产工艺作了概述,对其生产技术及工艺控制进行探讨,旨在为行业内从业者提供借鉴。 Qingxiangxing Baijiu is soft and sweet in the mouth. It is famous at home and abroad for its unique fragrance and freshness, and is popular with consumers. In recent years, after the National Development and Reform Commission removed the Baijiu industry from the “restricted” industries in the industrial directory, the Baijiu industry will surely usher in significant development opportunities. The characteristics of pure fragrance, mellow sweetness and softness of Qingxiangxing Baijiu are closely related to its unique brewing technology. This paper summarizes the production technology of Qingxiangxing Baijiu, discusses its production technology and process control, and aims to provide reference for practitioners in the industry.
