功能性可食蛋白膜的研究进展

摘要 随着国家对绿色环保的高度重视,人们在绿色消费上的意识也逐渐增强,现如今,由于大量的化学材料造成的环境污染和生态环境问题已经被国际上所重视,所以,功能性可食蛋白膜因为其具有较好的阻氧性和机械性能,且同时具备易消化、营养含量丰富等特点,现如今已经被众多学者重视并研究。文章概述了功能性可食蛋白膜的成膜机制和功能特性,以及在食品中的应用和未来的发展前景,为功能性可食蛋白质膜的开发制备提供参考。 As the country attaches great importance to green environmental protection, people’s awareness of green consumption has gradually increased. Nowadays, environmental pollution and ecological problems caused by a large number of chemical materials have been paid attention to by the international community. Therefore, functional edible protein membrane has been paid attention and studied by many scholars because of its good oxygen resistance and mechanical properties, as well as its easy digestion and rich nutrient content. In this paper, the film-forming mechanism and functional properties of functional edible protein films are expounded, and their applications in food and future development prospects are summarized, which will provide reference for the development and preparation of functional edible protein films.
