摘要
马铃薯淀粉是人类膳食能量的重要来源之一,被人体消化吸收后直接影响人体健康,由于马铃薯淀粉的品种、加工方式和自身结构的不同,以及受到外源添加物的影响,马铃薯淀粉的消化吸收会产生不同的变化。文章综述了近年来国内外关于马铃薯淀粉消化特性的影响因素研究进展,重点介绍多酚对马铃薯淀粉消化特性影响,在此基础上探讨多酚影响马铃薯淀粉消化性的机制,并提出了今后这一领域的主要研究方向,为开发马铃薯淀粉相关功能性食品和预防人体代谢疾病提供理论依据。
Potato starch is one of the important sources of human dietary energy.After it is digested and absorbed by human body,it directly affects human health.Due to the different varieties,processing methods and its own structure of potato starch,as well as the influence of exogenous additives,the digestion and absorption of potato starch produces different changes.This paper reviews the progress of the influencing factors of potato starch digestion characteristics in recent years,highlights the polyphenols of potato starch digestion characteristics,discusses the mechanism of potato starch digestion,and puts forward the main research direction,to provide the development of potato starch related functional food and prevent human metabolic diseases.
