线粒体和鹅肥肝形成的关系

摘要 鹅脂肪肝(俗称肥肝)作为高档水禽产品,富含不饱和脂肪酸,由营养过剩所引起。鹅肥肝是一种生理性脂肪肝,与人和其他哺乳动物中出现的病理性非酒精性脂肪肝病(NAFLD)不同,即使在严重的肝脂肪变性情况下,也不出现炎症、纤维化等病理症状,提示鹅肥肝存在某种独特的形成与保护机制。由于线粒体参与细胞的能量代谢和氧化应激,因此可能在鹅肥肝形成中扮演重要角色。本文着重围绕鹅肥肝的特点,对鹅肥肝的形成机理、线粒体的研究进展以及线粒体与鹅肥肝形成的关系进行综述,并展开适当讨论,为鹅肥肝的深入研究以及其他动物NAFLD的防治提供参考。 As a high-grade waterfowl product,goose fatty liver(commonly known as foie gras)is rich in unsaturated fat,which is caused by excessive nutrition.Goose fatty liver,unlike the pathological non-alcoholic fatty liver disease(NAFLD)in humans and other mammalian animals,is physiological,without occurrence of pathological symptoms such as inflammation and fibrosis even in the presence of severe hepatic steatosis,suggesting the existence of a unique mechanism that underlies the formation and protection of goose fatty liver.Since mitochondria are involved in cellular energy metabolism and oxidative stress,they may play an important role in the formation of goose fatty liver.In this paper,we focus on the characteristics of goose fatty liver,and review the formation mechanism of goose fatty liver,the progress of mitochondria-related research,and the relationship between mitochondria and the formation of goose fatty liver,so as to provide a basis for the in-depth study of goose fatty liver and the prevention and treatment of NAFLD in other animals.
