摘要
L-茶氨酸是茶叶中独有的游离氨基酸,有浓厚的鲜甜味和诱人的焦香味,具有松弛神经紧张、安神等多种功效。对L-茶氨酸的酶法合成进行了概括,并重点对酶催化合成L-茶氨酸的纯化进行综述。
L-theanine is a unique free amino acid in tea.It has a strong sweet taste and attractive burnt aroma,and has many functions such as relaxation of nervous tension and soothing the nerves.This article summarized the enzymatic synthesis of L-theanine,and focused on the purification of the enzyme-catalyzed synthesis of L-theanine.
