摘要
果蔬废弃物中含有大量的鼠李糖半乳糖醛酸I(Rhamnogalacturonan-I,RG-I),RG-I是一种多分支的结构域,以鼠李糖和半乳糖醛酸交替的双糖骨架为基础,具有许多优于传统果胶的功能,如调节肠道菌群和慢性代谢性疾病、输送药物及预防癌症,还可以做凝胶、乳化剂和重金属离子吸附剂等。本文系统概括了从果蔬废弃物中提取RG-I果胶的方法和应用现状,分析了其在应用中可能存在的问题,并对RG-I的发展进行了展望,旨在为RG-I果胶的深入研究与综合利用提供参考。
Fruit and vegetable waste contains a large amount of rhamnogalactonic acid I(RG-I). RG-I is a multi-branched domain based on an alternating disaccharide backbone of rhamnose and galacturonic acid. RG-I pectin has many functions superior to traditional pectin, such as regulating intestinal flora and chronic metabolic diseases, partiapating in drug delivery and cancer prevention, and can also be used as gel, emulsifier and adsorption of heavy metal ions. This paper systematically summarized the method and application status of extracted RG-I pectin from fruit and vegetable waste, analyzed the possible problems in its application, and forecasted its development, hoping to provide reference for in-depth research and comprehensive utilization of pectin.
