摘要
香橼饮食文化与茶文化有天然的内在联系,随着栽培技术的精进和种植领域的迁移,加上文人雅士的自发性传播,香橼入茶入汤入食的记载逐渐增多,对于香橼的食物性认知不可避免地受到了食补养生、怡情雅事的影响,与作为食材相比,香橼更趋近于佐茶佳物和社交工具。也因此,香橼这个道地中华食药材料,在历史上借由农经栽培、饮食烹调和医养开发总结,获得了具有鲜明中国特色的茶食文化身份和精神认同。考察历史上香橼的茶食和养生文化,对于今天香橼茶食之开发有极大的借鉴意义。
Since its birth,the citron diet culture has been inextricably linked with the tea culture.With the improvement of cultivation technology and the migration of planting field,as well as the spontaneous diffusion thanks to the efforts of scholars and artists,the records of making tea and soup and food out of citron are gradually increasing.The recognition of citron as tonic food is inevitably influenced by recreational actitivies as well as health-preserving practices.In the diet field,compared with food materials,citron is more like tea and social tools.Therefore,citron,genuine Chinese food and medicine material,has obtained the cultural identity and spiritual identity of tea with distinctive Chinese characteristics through the summary of agricultural economic cultivation,food cooking and medical care development.
