摘要
预处理作为鱼类深加工的前序工序,其效果直接影响鱼类机械化加工效率和产品品质。本文围绕去鳞、去头、去脏等鱼类初加工关键工序,阐述各工序工作原理、技术特点及研究动态。基于归纳各项初加工技术,对比分析国内外鱼类初加工技术与装备研究现状,提出了鱼类预处理加工技术未来的发展方向。
As the pre-processing process of fish products,pretreatment directly affects the efficiency of fish mechanization processing and product quality.In this paper,the working principle,technical characteristics and research trends of the key processes of fish primary processing,such as de-scaling,de-heading and de-fouling,are described.Based on the summary of the basic processing technology,the research status of fish processing technology and equipment at home and abroad was compared and analyzed,and the future development direction of fish pretreatment processing technology was proposed.
