摘要
本文以南洞庭湖洲产的野生藜蒿为研究对象,测定了其茎和叶的营养成分及重金属含量。结果发现,在鲜藜蒿中,藜蒿嫩茎中水分、维生素C、总蛋白、黄酮类物质含量最高,藜蒿叶中三萜类物质、膳食纤维含量最高;藜蒿可食部位富含钾、钙、镁元素,且铅、铬、砷、汞含量低于国标限量,但因洞庭湖湖水污染,导致镉含量超过国家安全限量标准,需要在加工过程中进行无害化处理。
In this paper, the nutrient composition and heavy metal content of the stems and leaves of the wild Artemisia selengensis from South Dongting Lake were determined. The results showed that the contents of water, vitamin C,total protein and flavonoids in the tender stems of Artemisia selengensis were the highest, and the contents of triterpenoids,and dietary fiber in the leaves of Artemisia selengensis were the highest;The edible parts of Artemisia selengensis are rich in potassium, calcium and magnesium, and the content of lead, chromium, arsenic and mercury is lower than the national standard limit. However, due to the water pollution of Dongting Lake, the cadmium content exceeds the national safety limit,which requires harmless treatment during processing.
