不同分子量壳寡糖对黄羽肉鸡屠宰性能和肉品质的调节作用 被引量:1

Influence of Chitosan Oligosaccharides with Different Molecular Weights on Slaughter Performance and Meat Quality of Yellow-Feathered Broilers

摘要 研究不同分子量的壳寡糖对28~56日龄黄羽肉鸡屠宰性能和肉品质的调节作用,以探索发挥最佳效应的壳寡糖分子水平。选用平均初始体重(360.97g±2.40g)基本一致的28日龄黄羽肉鸡公鸡240只,平均分配到24个鸡笼中,相邻6个鸡笼为同一组,分别饲喂对照组日粮及添加低、中、高分子质量(2400、4800及9600Da)壳寡糖的饲粮。试验周期28d。试验结果表明:饲粮中添加4 800 Da壳寡糖组胸肌率显著高于对照组和2 400 Da组(P<0.05),与对照组相比,4 800 Da和9 600 Da壳寡糖组的腹脂率显著降低(P<0.05);饲粮中添加不同分子量的壳寡糖对胸肌各指标均未产生显著影响(P>0.05),而腿肌滴水损失中、高分子量组显著低于对照组(P<0.05),高分子量组pH显著高于其它各组(P<0.05);饲粮中添加分子量为2400Da和4800Da的壳寡糖,显著提高肉鸡胸肌组织中肌苷酸含量(P<0.05)。由此可见,4800Da中分子量壳寡糖在提高肉鸡的胸肌率、降低腹脂率、降低腿肌滴水损失以及增加肌肉肌苷酸含量方面有明显的调节作用,9 600 Da分子的壳寡糖可有效降低腹脂率和腿肌滴水损失,而2 400 Da壳寡糖仅在提高肉鸡胸肌肌苷酸含量表现出调节功能。 The effect of chitosan oligosaccharides with different molecular weights on slaughter performance and meat quality of 28~56-day-old yellow-feathered broilers was investigated, so as to explore the appropriate moleucular weight of chitosan oligosaccharide with optimum efficiency. A total of 240 4-week-old male yellow-feather broilers with similar average initial body weight were distributed evenly into 24 chicken cages,and the adjacent 6 chicken cages were in the same group.The control group was fed with basal diet,while diet supplemented with low and medium and high molecular weight(2 400 Da,4 800 Da,9 600 Da)chitosan oligosaccharide were fed to other test group,respectivel.The experiment lasted for 28days.The results showed that the breast muscle rate was higher in 4800Da group than that in the control group and 2 400 Da group(P < 0.05).Conper with control group,adding 4 800 Da and 9600 Da molecular weight chitosan oligosaccharide were more effective on reducing abdominal fat percentage(P < 0.05).Chitosan oligosaccharide supplementation with different molecular weight had no significant effect on the indexes of breast muscle(P>0.05). While the drip loss of leg muscle in the middle and high molecular weight groups was significantly lower than that in the control group(P < 0.05).The pH of polymer group was significantly higher than that of other groups(P<0.05).The effect of chitosan oligosaccharides with molecular weight of 2 400 Da and 4 800 Da on broilers was mainly reflected in the significant increase of breast muscle inosinic acid content(P<0.05). In conclusion, molecular weight chitosan oligosaccharide in 4 800 Da plays an important role in increasing breast muscle rate,reducing abdominal fat rate,reducing leg muscle drip loss and increasing muscle inosinic acid content in broilers.Chitosan oligosaccharide of 9 600 Da molecule can effectively reduce abdominal fat rate and leg muscle drip loss.While 2400 Da chitosan oligosaccharide only showed regulatory function in increasing the content of inosinic acid in breast muscle of broilers.
