摘要
浙江省遂昌县野生小径竹资源丰富,其笋品质优良。文章总结了水煮小径竹笋加工技术,详细介绍了工艺流程中的蒸煮、冷却、漂洗、罐装、杀菌等方法,强调了加工流程中的关键技术要点。该技术操作简单,实用性强,适合在山区竹笋加工企业中推广应用,对提升小径竹林经济效益、促农增收和助推乡村振兴具有重要意义。
Suichang County in Zhejiang Province is rich in wild small-diameter bamboo resources,and its bamboo shoots are of good quality.This paper summarizes the boiled shoot processing technology for the small-diameter bamboo,introduces in detail the steaming,boiling,cooling,rinsing,canning and sterilization in the process flow,and emphasizes the key technical points.The technology is easy for operation and strong in practicability,suitable for being promoted and applied among bamboo shoot processing enterprises in mountainous areas.It is of important significance for improving the economic benefits of small-diameter bamboo forests,increasing farmers’income and boosting rural revitalization.
