黑龙江省连环湖地区3种土著虾肌肉营养成分分析 被引量:2

Muscle Nutrient Composition Analysis of Three Indigenous Shrimps in Lianhuan Lake Area Heilongjiang Province

摘要 对具有开发利用前景的黑龙江省连环湖3种土著虾类日本沼虾、秀丽白虾和中华小长臂虾肌肉营养成分进行测定分析,结果显示,3种虾基本营养成分日本沼虾的粗蛋白、粗脂肪和灰分含量较高,中华小长臂虾的水分含量较高。3种虾肌肉蛋白质中均测定出氨基酸17种,3种虾中氨基酸总量分别为68.09%、72.28%、73.00%,必需氨基酸(EAA)总量分别为23.30%、25.88%、26.18%;必需氨基酸指数分别为63.55、67.46、70.39,氨基酸组成比例符合WHO/FAO评分模式标准。3种虾肌肉氨基酸评分(AAS)均不低于0.62,化学评分(CS)均不低于0.43。表明黑龙江省3种土著淡水虾营养价值高,是优质水产产品。 The muscle nutrition components of three indigenous shrimps,Macrobrachium nipponense,Exopalaemon modestus,Palaemonetes sinensis,which had potential for development and utilization in Lianhuan Lake of Heilongjiang Province,were determined and analyzed.The results showed that the contents of crude protein,crude fat and ash of the three basic nutrients of Macrobrachium nipponense were higher,and the water content of Palaemonetes sinensis was higher.Seventeen kinds of amino acids were detected in the three kinds of shrimp muscle proteins.The total amount of amino acids in the three shrimp species was 68.09%,72.28%,73.00%,and the total amount of essential amino acids(EAA)was 23.30%,25.88%,26.18%,respectively.The essential amino acid index was 63.55,67.46,70.39,and the amino acid composition was in accordance with WHO/FAO standard.The amino acid score(AAS)and chemical score(CS)of three kinds of shrimp muscle were not lower than 0.62 and 0.43 respectively.It showed that the three indigenous freshwater shrimps in Heilongjiang Province had high nutritional value and were high-quality aquatic products.
