摘要
玉米类胡萝卜素除了作为维生素A原,还具有护眼、抗癌、抑制肥胖、预防阿尔茨海默氏病和骨质疏松以及抗氧化等多种生物活性;提取玉米淀粉之后的副产物玉米蛋白粉富含类胡萝卜素,是提取类胡萝卜素的主要原料之一。本文介绍了玉米中主要类胡萝卜素的种类,综述了其生物活性及玉米蛋白粉中类胡萝卜素的提取技术,展望了今后的研究趋势,为促进玉米资源的开发利用提供参考。
In addition to the role of provitamin A, carotenoids in corn was also involved in physiological activities to human body such as eye protection, anti-cancer, preventing obesity, prevention of Alzheimer′s disease, prevention of osteoporosis, and antioxidant activity;During the processing of corn starch, a large number of by-products of corn gluten powder rich in carotenoids were produced. Then, corn gluten meal became one of the best materials for extracting carotenoids. In the present study, the major types of carotenoids in corn and their biological activities as well as extraction technology from corn gluten meal were summarized. Finally, the promising key research directions were also proposed in order to provide references for the development and application of corn carotenoids.
