摘要 为进一步掌握餐饮服务行业火锅店食材毛肚中各检测项目的检出情况及有害因素的污染状况,为食品安全评估、食品卫生标准修订提供科学依据,本文对全区50家火锅店抽检50份毛肚样品中的pH、甲醛、挥发性盐基氮、铅、总汞以及总砷6个项目。结果表明,50个抽检样品中有7个样品pH超标,超标率为14%,其他项目检出但未超标。其中,银川市抽检的18个样品中有2个样品pH超标,判定为不合格样品;石嘴山市抽检的7个样品中有2个样品pH超标,判定为不合格样品;吴忠市抽检的16个样品中有3个样品pH超标,判定为不合格样品;固原市抽检的4个样品全部合格,中卫市抽检的5个样品全部合格。 In order to further understand the detection status of each detection item and the pollution status of harmful factors in the hairy belly of hot pot restaurants in the catering service industry,and to provide scientific basis for food safety assessment and food hygiene standard revision,this paper conducted a sampling test of pH,formaldehyde,volatile base nitrogen,lead,total mercury and total arsenic in 50 samples of hairy belly from 50 hot pot restaurants in the region.The results showed that the pH of 7 samples out of 50 samples exceeded the standard,and the rate was 14%.The other items were detected but did not exceed the standard.Among the 18 samples sampled in Yinchuan city,2 samples exceeded the pH standard and were judged as unqualified samples.Among the 7 samples sampled in Shizuishan city,2 samples exceeded the pH standard and were judged as unqualified samples.Among the 16 samples sampled in Wuzhong city,3 samples exceeded the pH standard and were judged as unqualified samples.Guyuan City sampled 4 samples all qualified,Zhongwei city sampled 5 samples all qualified.
