厦门市冷冻水产品生产企业存在问题分析及探讨

摘要 冷冻水产品行业在厦门市已形成一定的产业集群,但具有一定规模的企业不多,大规模的现代生产方式与传统的小生产方式并存,行业整体技术含量不高,同时检测能力和检测水平的覆盖面较窄,对冷冻水产品行业的发展有一定的局限性。本文通过对获证企业的现场核查情况进行汇总和分析,阐明了厦门市冷冻水产品生产企业生产过程中存在的问题,并对问题产生的原因进行分析,提出一系列有效的改进措施以及合理化建议,把产品标准及相关法律法规融入企业实际管理中,促进冷冻水产品生产企业的健康可持续发展,有利于从根本上提升企业产品质量,降低食品安全风险,确保企业生产能够有序开展,全面提高企业质量管理水平,进一步增强企业产品的市场竞争力。 The frozen aquatic products industry has formed a certain industrial cluster in Xiamen,but there are not many enterprises with a certain scale.The large-scale modern production mode coexists with the traditional small production mode,and the overall technical content of the industry is not high.At the same time,the coverage of detection capability and level is narrow,which has certain limitations on the development of the frozen aquatic products industry.Based on the summary and analysis of the on-site inspection of the certified enterprises,this paper expounds the problems existing in the production process of the frozen aquatic products production enterprises in Xiamen,analyzes the causes of the problems,puts forward a series of effective improvement measures and rationalization opinions and suggestions,integrates the product standards and relevant laws and regulations into the actual management of the enterprises,and promotes the healthy and sustainable development of the frozen aquatic products production enterprises.It is beneficial to fundamentally improve the quality of enterprise products,reduce the risk of food safety,ensure the orderly development of enterprise production,comprehensively improve the level of enterprise quality management,and further enhance the market competitiveness of enterprise products.
