油莎草块茎-杏仁速溶粉喷雾干燥工艺优化研究

摘要 油莎草块茎具有良好的综合经济价值,对油莎草块茎-杏仁速溶粉喷雾干燥工艺参数的确定,有助于为油莎草块茎资源充分利用提供理论依据。该研究以油莎草块茎和杏仁为主要原料,通过正交试验对干燥参数(出风温度、进风温度、进料流量)进行优化,利用喷雾干燥技术制备速溶粉。结果表明:最佳喷雾干燥工艺为出风温度95℃,进风温度180℃,进料流量1.2 L·h^(-1),感官评分为90.62分,在此条件生产的油莎草块茎-杏仁速溶粉风味佳,口感好,最大程度上保持了油莎草块茎特有的香味和色泽。 Cyperus esculentus var.sativus tuber has good comprehensive economic value,and the determination of spray drying process parameters of instant powder of C.esculentus var.sativus tuber and almond is helpful to provide theoretical basis for the full utilization of the resources of C.esculentus var.sativus tuber.In this study,spray drying technology was used to prepare instant powder from C.esculentus var.sativus tuber and almond.The drying parameters(outlet temperature,inlet temperature and feed flow rate)were optimized through the orthogonal test.The results showed that the optimal spray drying process was as follows:air outlet temperature 95℃,air inlet temperature 180℃,feed flow rate 1.2 L·h^(-1),sensory score 90.62.Under these conditions,the instant powder produced by C.esculentus var.sativus tuber and almond had good flavor and taste,and maintained the unique flavor and color of C.esculentus var.sativus tuber to the maximum extent.
