光照对低温贮藏下NFC鲜榨橙汁品质的影响 被引量:2

摘要 为探讨光照对低温贮藏下非浓缩还原(not from concentrate, NFC)鲜榨橙汁品质的影响,以聚对苯二甲酸乙二醇酯透明包装的NFC鲜榨橙汁成品为试验材料,研究光照对低温贮藏NFC鲜榨橙汁的维生素C、5-羟甲基糠醛、有机酸、柠檬苦素以及挥发性成分等品质指标的影响。结果表明,与光照处理相比,避光显著减少了低温贮藏的NFC鲜榨橙汁中维生素C、奎尼酸和苹果酸的损失,显著降低了柠檬苦素生成,改变了特征挥发性物质(β-月桂烯、D-柠檬烯、丁酸乙酯、己酸乙酯、己醛、壬醛和癸醛)的浓度。因此,避光有利于保持低温贮藏下NFC鲜榨橙汁的品质,建议企业采用避光材料包装产品,或者透光材料包装的产品在货架销售期间尽量在避光条件下存放。 To study the effect of light on the quality of not from concentrate(NFC)of fresh-squeezed orange juice,the changes of vitamin C,5-hydroxymethyl furfuraldehyde(5-HMF),organic acid,limonin,and volatile components in NFC of fresh-squeezed orange juice products packaged with transparent polyethylene terephthalate(PET)were investigated during storage at low temperature with or without light condition.Results showed that avoiding light significantly maintained vitamin C,quinic acid,and malic acid content,reduced the production of limonin,and changed the contents of aroma substances includingβ-laurene,D-limonene,ethyl butyrate,ethyl caproate,hexanal,nonanal,and decanal.Therefore,avoiding light was of benefit to maintaining the quality of NFC freshly squeezed orange juice storage at low-temperature conditions.It was suggested that companies should use light-proof packaging materials for NFC freshly squeezed orange juice,or the products packaged with transparent material could be stored as far as possible to avoid the light during the shelf period.
