摘要 丙氨酸是一种脂肪族的非极性疏水性氨基酸,是人体的非必需氨基酸,可通过身体的新陈代谢合成,根据构型,丙氨酸目前可以分为L-丙氨酸、D-丙氨酸、DL-丙氨酸及β-丙氨酸。丙氨酸目前广泛应用于食品添加剂、药品、保健品和表面活性剂等。为了避免传统工艺生产方法带来的污染等问题,丙氨酸的合成逐步被微生物发酵法及酶催化法所替代,绿色、温和、高产量的生物合成方法大大提高了丙氨酸含量的同时也为丙氨酸市场带来了发展前景。该文从丙氨酸的应用及合成方法等方面阐述了丙氨酸微生物合成的研究进展。 Alanine is an aliphatic non-polar hydrophobic amino acid, which is a non-essential amino acid that can be synthesized by the body’s metabolism. According to its configuration, alanine can be divided into L-alanine, D-alanine, DL-alanine and β-alanine. Alanine is widely used in food additives, medicines, health care products and surfactants. To avoid pollution and other problems caused by traditional production methods, the synthesis of alanine has been gradually replaced by microbial fermentation and enzyme catalysis, which has become the current green, mild, and high-yield biosynthesis method, greatly improving the content of alanine, and also bringing development prospects to the alanine market. In this paper, the progress of microbial synthesis of alanine is reviewed from the application and synthesis methods of alanine.
