浓香型白酒在橡木桶中陈酿的研究及应用

摘要 不同的贮存容器,对白酒的陈酿产生着不同的效果,影响着产品质量,因此,在生产实践中,如何选择多样性的贮存容器,对白酒风味影响很大。主要研究浓香型白酒在橡木桶中陈酿过程中风味的变化及应用;经实验,橡木桶(RCA、RCF)的使用对浓香型白酒的风味物质产生了一定影响,丰富了浓香型白酒风味和口感,赋予一定的特色;经过正交实验分析,确定了最佳酒度、橡木桶及陈酿时间,产品推广后,取得了良好的效果。 Different storage containers have different effects on the aging of Baijiu and affect the product quality.Therefore, in production practice, how to choose a variety of storage containers has a great impact on the flavor of Baijiu.This paper mainly studied the flavor change and application of Luzhou flavor Baijiu during aging in different oak barrels;Through the experiment, the use of two kinds of oak barrels(RCA, RCF) had a certain impact on the flavor substances of Luzhou flavor Baijiu, enriched the flavor and taste of Luzhou flavor Baijiu, and endowed it with certain characteristics;Through orthogonal experimental analysis, the optimal alcohol content, oak barrel and aging time were determined,After market promotion, good results have been achieved.
