摘要
对酿酒原料基地、高粱品种选育及不同酿造工艺的白酒选用酿酒专用高粱的品质标准研究进展进行综述,并对新型糯性原料(糯小麦、糯大麦、糯玉米等)的开发现状进行总结,旨在为白酒品质的稳定和提升提供依据。
This paper mainly reviewed the research progress of liquor making raw material base,sorghum variety breeding and the quality standards of liquor making special sorghum for Baijiu with different brewing techniques.Then it summarized the development of new waxy materials(waxy wheat,waxy barley,waxy corn),aiming at providing basis for the stability and improvement of Baijiu quality.
