河西走廊地区酿酒葡萄与葡萄酒品质特征差异研究

Study on the Difference of Quality Characteristics Between Wine Grape and Wine in Hexi Corridor

选用河西走廊地区主栽的10种酿酒葡萄为研究对象,测定酿酒葡萄的含糖量、可溶性固性物、总酸、pH值、成熟系数、潜在酒度和穗重,运用主成分分析对酿酒葡萄的品质进行评价。同时,以上述酿酒葡萄为原料酿造葡萄酒,并对葡萄酒的酒精度、干浸出物、总糖、挥发酸、铁、铜、柠檬酸、甲醇和二氧化硫进行测定。结果表明,“威代尔”“佳美”“白彼诺”在河西走廊10种酿酒葡萄综合评价中位列前3名,具有较好的加工潜力和品种推广价值。葡萄酒的品质因葡萄品种和酿酒工艺而不同。10种酿酒葡萄所酿造葡萄酒的酒精度和干浸出物含量高于国家标准要求,其他指标均符合要求。可为河西走廊地区酿酒葡萄的优质栽培和葡萄酒的生产提供科学依据。

Ten kinds of wine grapes mainly grown in Hexi Corridor were selected as the research objects,the sugar content,soluble solids matter,total acid,pH,ripening coefficient,potential wine degree and panicle weight of wine grape were determined,and the quality of wine grapes was analyzed and evaluated by principal component analysis.At the same time,wine was made from the above wine grapes,and the alcohol content,dry extract,total sugar,volatile acid,iron,copper,citric acid,methanol and sulfur dioxide of the wine were determined.The results showed that“Vidal”,“Gamay”and“Pinot blanc”ranked the top three in the comprehensive evaluation of 10 kinds of wine grapes in Hexi Corridor,with good processing potential and variety promotion value.The quality of the wine varies according to the grape variety and the wine making process.The alcohol content and dry extract content of 10 kinds of wine grapes were higher than the national standard requirements,and other indicators met the requirements.This study could provide scientific basis for wine grape cultivation and wine production in Hexi Corridor area.
