工夫红茶自动萎凋机研制及其制茶品质分析 被引量:1

摘要 研制出一款红茶自动萎凋机,对该萎凋机萎凋帘表面风速及温度、叶层厚度、萎凋叶含水量等性能进行检测,结果表明,萎凋帘表面风速差异<0.2 m/s,温度差异<1℃,叶层厚度检测偏差为0.2 cm,萎凋叶含水量检测偏差约为1个百分点,说明萎凋机性能较好。进一步以6CW-120型单层萎凋槽作为对照,对比分析自动萎凋机的红茶加工质量。结果表明,采用萎凋机制得的红茶在香气、叶底和总体品质方面均优于萎凋槽萎凋的红茶,水浸出物、茶多酚、茶红素含量高于萎凋槽样品。试验结果说明,利用自动萎凋机生产红茶的品质达到并部分超过萎凋槽生产的红茶。 An automatic black tea withering machine was designed.The surface air volume and temperature of the withering curtain,the thickness of the leaf layer,and the water content of the withered leaves were tested.The results show that the surface wing speed error of withering curtain was<0.2 m/s.The temperature error was<1℃.The detection deviation of leaf layer thickness was 0.2 cm,and the detection deviation of water content of withered leaves was about 1%,indicating that the performance of the wilting machine was good.Furthermore,the black tea processing quality of the automatic withering machine was compared and analyzed using the 6CW-120 single-layer withering tank as a control.The results show that the black tea obtained by the withering machine was superior to the black tea withered in the withering tank in terms of aroma,leaf base and overall quality,and the contents of water extract,tea polyphenols and thearubigin were higher than the withering tank samples.The test results show that the quality of black tea produced by the automatic withering machine reached and partially exceeded the production level of the withering tank.
