摘要
食品安全在全球可持续发展中的重要性毋庸置疑。近几十年来,由于环境污染引起的农作物中有害物质含量增加威胁着食品安全和人类健康。重金属和类金属(如Hg、As、Pb、Cd和Cr)会对人体代谢组学产生干扰,导致多种慢性病发病率增高甚至死亡。本文从重金属污染来源出发,着重阐述了与人类健康风险相关的重金属检测方法,并展望未来重金属检测方法的发展方向。
There is no doubt about the importance of food safety in global sustainable development.In recent decades,the increase of harmful substances in crops caused by environmental pollution has threatened food safety and human health.Heavy metals and metalloids(such as Hg,As,Pb,Cd,and Cr)can interfere with human metabonomics,leading to increased incidence rate of many chronic diseases and even death.Therefore,starting from the source of heavy metal pollution,this paper focuses on the heavy metal detection methods related to human health risks,and prospects the development direction of heavy metal detection methods in the future.
