摘要
在我国数千年的历史中,饮食文明在我国文明中占有极大比例,且我国特色饮食文化在世界上处于领先地位,少有国家拥有可与我国相提并论的饮食文明。几年前我国拍摄制作了纪录片《舌尖上的中国》,通过将食品雕刻这一关键工艺运用美食制作中,可以有效展示菜品的“意”与“形”,使菜品更为美观精致,甚至可以表达丰富的情感与内涵。为此,本文主要针对食品雕刻工艺在烹饪中的应用情况进行相关探析。
In the history of thousands of years of China,food civilization accounts for a great proportion of China’s civilization,and China’s characteristic food culture is in the leading position in the world,few countries have the same food civilization as our country,China’s food culture is difficult to meet competitors.A few years ago,China shot and produced the documentary“A Bite of China”.By applying the key process of food carving to the food production,it can effectively display the“meaning”and“shape”of the dishes,make the dishes more beautiful and delicate,and even extend the rich emotion and connotation.Therefore,this article mainly analyzes the application of food carving technology in cooking.
