摘要
羊肚菌基于其较高的营养价值和药用价值备受人们青睐,其味道鲜香,肉质脆嫩,富含蛋白质、多糖、多酚、维生素、氨基酸等多种活性成分,具有抗氧化、抗肿瘤、抗炎症、抗疲劳、抗菌、降糖和降脂等多种功能活性,可开发为功能性保健食品或食品添加剂.
Morchella is favored because of its high nutritional and medicinal value.It tastes delicious, crisp and tender.It is rich in protein, polysaccharides, polyphenols, vitamins, amino acids and other active ingredients.It has antioxidant, anti-tumor, anti-inflammatory, anti-fatigue, antibacterial, hypoglycemic and lipid-lowering functions and can be developed as functional health food or food additives.
