摘要 探究亚临界水萃取和超声辅助水提取的工艺条件,采用响应面进行优化,并对2种方法的花色苷得率及抗氧化活性进行比较。结果表明:亚临界水萃取的最佳工艺为萃取温度102℃、料液比1∶31(g/mL)、萃取时间10 min,在此条件下花色苷得率为4.453 mg/g;超声辅助水提取的最佳工艺为超声温度55℃、料液比1∶34(g/mL)、超声时间15 min,在此条件下花色苷得率为5.248 mg/g。在亚临界水萃取条件下,花色苷DPPH·和ABTS+·的IC50分别为1.746 mg/mL和1.678 mg/mL。试验证明,亚临界水萃取法可获得具有较高抗氧化活性的花色苷。 The process conditions of subcritical water extraction and ultrasonic assisted water extraction were investigated, which was optimized by response surface, and the anthocyanin yield and antioxidant activity of the two methods were compared. The results showed that the optimal extraction conditions were extraction temperature 102 ℃, solid-liquid ratio 1 ∶31(g/mL) and extraction time 10 min. Under these conditions, the anthocyanin yield was 4.453 mg/g. The optimal extraction conditions were ultrasonic temperature 55 ℃, solid-liquid ratio 1 ∶34(g/mL) and ultrasonic time 15 min. Under these conditions, the anthocyanin yield was 5.248 mg/g. Under the condition of subcritical water extraction, the IC50of DPPH· and ABTS+·were 1.746 mg/mL and 1.678 mg/mL, respectively. The results showed that anthocyanins with higher antioxidant activity could be obtained by subcritical water extraction.
