摘要 生姜是商品率高、见效快、经济效益好的优势作物,也是全球重要的食药同源蔬菜。为评价生姜种质资源,本试验以‘云南小黄姜’‘绵姜’‘潮汕南姜’‘四川黄姜’‘广西黑姜’5种不同生姜品种为材料,通过分析不同生姜生长和品质的差异,以期筛选出优质的生姜品种。结果发现供试的5个生姜品种中,‘广西黑姜’的株高、茎粗、叶长、叶宽和可溶性蛋白含量最高,显著高于其它4个品种。‘云南小黄姜’的叶片数和叶绿素含量显著高于其它4个品种。‘潮汕南姜’的分枝数、可溶性固形物、可溶性糖、淀粉和姜辣素含量最高,与其它4个品种差异显著。‘四川黄姜’的VC、姜黄素含量显著高于其它4个品种。‘绵姜’的纤维素含量最高。不同生姜品种的生长指标和营养成分均存在较大差异,试验结果为后期生姜的品种引进和开发利用提供了理论依据。 Ginger is a dominant crop with high commodity rate,quick effect and good economic benefit.It is also an important food and drug homologous vegetable in the world.To evaluate the germplasm resources of ginger,five different ginger varieties‘Yunnan little ginger’,‘Mianjiang’,‘Chaoshan south ginger’,‘Sichuan yellow ginger’and‘Guangxi black ginger’were used as test materials to screen high-quality ginger varieties by analyzing their differences in growth and quality.The results showed that the plant height,stem diameter,leaf length,leaf width and soluble protein content of ‘Guangxi black ginger’were significantly higher than others. The leaf number and chlorophyll content of ‘Yunnan little ginger’ were significantly higher than others. The branch number, soluble solids, soluble sugar, starch and gingerol content of ‘Chaoshan south ginger’ were significantly higher than others. The contents of VC, curcumin and protease of ‘Sichuan yellow ginger’ were significantly higher than others. The cellulose content of ‘Mianjiang’ was the highest among the five ginger varieties. Different ginger varieties had great differences between growth indicators and nutritional components. The results provided a theoretical basis for the introduction of new varieties and the later development and utilization of gingers.
